Gyokuro means "precious dew“ in Japanese. This tea is characterized by deep, bright green color of the cup, sweet flavor and taste, very low astringency and a rich, round aftertaste. It is brewed with very low water temperature of 50-55°C. Gyokuro is made from shaded tea leaves. After 4-6 weeks without direct contact with sunlight, the tea leaves develop dark green color and superior umami sweetness. The reason is production of amino acids(umami) instead of catechins(bitterness) in the shaded leaves. Gyokuro is considered the most expensive and refined green tea in Japan.
